Polish Appetizer

This is really simple, but it’s also very good. It’s a completely different take on Kielbasa, and what you can do with it. This comes from a cookbook I got in Jackson Michigan. The title is “Heavenly Delights,” and as you might guess, a group of church ladies put it together. You can’t beat the church ladies and how they can cook can you? Anyway, if you are looking for a quick and simple appetizer, and want to surprise your friends, try this one…

Ingredients

1 pound kielbasa

1 cup apricot preserves

2 tablespoons lemon juice

2 teaspoons Dijon mustard (I used whole grain mustard)

¼ teaspoon ginger powder (ground)

In a medium saucepan, combine all the ingredients except the kielbasa. Mix well, and cook over low heat until nice and smooth. Cut kielbasa into bite size pieces. Add the kielbasa to the sauce and heat thoroughly. The longer it simmers the better it gets.
