Apple-Grape-Honey Peanut Butter Salad

Apple Salad with Honey Peanut Dressing

This was a real find for me. It comes from a cookbook I bought on a trip to Pebble Beach, California. We were wandering around in Carmel, after I had played the Pebble Beach links, (a great thrill) and I found this cookbook called “The Golfers Cookbook.” It featured a number of recipe’s from the pro golfers and their wives who loved the area, and the Pebble Beach golf experience. As I thumbed through the book, this recipe stood out for me. It cried out, “you’ve got to try this.” So I did. It’s really good…it may sound a little different, but when you put it together, you won’t stop making it. I changed it a tiny bit, I always add the celery and grapes, the original suggests one or the other, it didn’t change its goodness.

Ingredients

-4 crisp apples (your choice, I like Red Delicious or Honeycrisp)

-1/2 cup golden raisins

-2-3 stalks celery diced

-1 ½ cup sliced seedless grapes (green or red, both work)

-1 cup honey roasted peanuts

 

Dressing

¼ cup honey

1/3 cup peanut butter

½ cup mayonnaise

 

Dice apples to smallish pieces.

Add celery, raisins, grapes, and peanuts to diced apples.

For the dressing, blend together the peanut butter, honey and mayo until creamy and semi thick.

Toss the ingredients gently then add dressing and toss again. Best if served right away, but it will last.

 

(You can cut this down too…4 apples will make a lot, and experiment with the dressing…more peanut butter or honey and less mayo to taste. You’ll figure it out)
